Patricia Nutrition recipe for delicious Lentil Soup with Vegetables!
LENTIL soup WITH VEGETABLES – Ingredients:
Olive Oil
1 Yellow Onion Sliced
1 Leek Sliced
Fennell Bulb sliced/chopped
4 Cloves of Garlic
3 Celery Stalks sliced
Sea Salt/Black Pepper
4 cups of Veggie broth or water
1 cup of diced potatoes, ½ sweet ½ purple (or more)
1 zucchini sliced in rounds and then in halves
1 summer squash sliced in rounds and then in halves
1 Cup of Lentils rinsed and drained
LENTIL SOUP WITH VEGETABLES – directions:
Heat large pot over medium low heat
Add olive oil, onion, leek, fennel bulb, garlic, celery
Add 2 cans of crushed, or whole tomatoes
Add sliced zucchini, and sliced summer squash
Add potatoes cook for 5 minutes
Add 4 cups of Veggie Broth
Lower/simmer, add more spices as desired
